Each region in India has it’s own unique cooking style. Where cream, yogurt, ghee and nuts flavour northern dishes, southern dishes are most often flavoured with chilies, coconut and coconut oils. The one element that unites these varied tastes together is the use of spices to create the flavours and aromas that are distinctive to Indian cuisine!

Common Indian Spices

Turmeric: This bright yellow, ground spice is mainly used for its colour rather than flavour because of its bitter taste. Mustard Seed: Black mustard seeds are often used to add an edgy flavour to curries and are often used in pickling.
Cumin: A strong tasting and aromatic spice, cumin can be used either whole or ground to flavour curries and rice. Paprika: Made from grinding the dried pods of different varieties of the red pepper, this spice can range from mild and sweet, to the fiery heat of a chili pepper.
Coriander: Coriander seeds can be ground into an aromatic powder and are used widely in Indian style dishes. Cinnamon: Sold ready-ground or in stick form, cinnamon is one of the world’s oldest known spices. It is often used to add aromatic flavour to both the sweet and the savory.
Fenugreek Seed: With their curry-like aroma, fenugreek seeds add a slightly bitter taste to many Indian dishes. These seeds are often dry-roasted to intensify their flavour. Fennel: Known for their sweet and aromatic taste, fennel seeds are often used to flavour certain curries.

Common Indian Herbs

Curry Leaves: Bought either dried or fresh, curry leaves add a strong aromatic ‘curry-like’ flavour to many Indian dishes. Fresh Coriander: Coriander (cilantro) can be purchased as bright green leaves that add a fresh taste to any dish or can be used as an attractive garnish.
